In this study the ethanolic extracts were obtained from yacon leaves collected in Chia (Cundinamarca) and San Francisco (Antioquia), Colombia. The maximum content of total phenols and flavonoids was 11.6 ± 0.4 mg GAE/mL and 0.37 ? 0.03 mg QE/mL to Chia; 5.04 ± 0.13 mg GAE/mL and 0.21 ? 0.03 mg QE/mL to San Francisco. All samples showed in vitro inhibition of pancreatic alpha-amylase and lipase enzymes. HPLC-MS analysis showed pseudomolecular ions corresponding to quercetin and chlorogenic acid, ferulic, caffeic and quinic. The results suggest that yacon leaves contain metabolites that could be used as an alternative for controlling obesity.
