Se identificó a 60 cereros activos, cuya mayor parte trabajaba también en confitería: quince maestros cereros confiteros, 39 oficiales y seis aprendices; de ellos, siete maestros, siete oficiales y tres aprendices fueron indígenas (28,33%); oficialmente, hubo un oficial mulato libre y sólo un aprendiz esclavo (3,33%).
