In a global context marked by challenges such as climate change and population growth, it is essential to propose new methodologies to understand the complex interconnections between the different actors and activities of the food system. In this context, food system living labs (FSLL) emerge as an effective strategy to generate alternative solutions that enable an efficient transition to resilient and sustainable agrifood systems. This review explores the concept and relevance of food system living labs, focusing on their importance, the innovations implemented, the economic, social, and environmental impacts they generate, and the challenges and successful strategies in their implementation. In addition, it analyzes four key aspects for their success: i) collaborative innovation platforms, ii) innovation for sustainability, iii) experimentation in real environments, and iv) development and adoption of new technologies, all within the framework of multisectoral participation and co-creation processes with local actors in rural and urban contexts.
