Un panorama alimenticio: Una óptica mediante un análisis cienciométrico y revisión sistemática

Abstract
Comprender cómo los desafíos relacionados con la seguridad alimentaria, sostenibilidad y calidad de vida se han convertido en una de las acciones de atención constante. La finalidad de este estudio es ofrecer un análisis profundo de las líneas de investigación que se abordan en la actualidad respecto al panorama alimenticio. El método fue cualitativo descriptivo, con base en una revisión sistemática de literatura y, con ello, un análisis cienciométrico tomando los datos de Scopus en el lapso de 2012 a 2022, con enfoque cualitativo descriptivo. Los resultados demuestran una relación directa entre el avance de los años y el aumento progresivo de la cantidad de publicaciones. Se distinguieron tres tipos de tendencias: consolidadas, intermedias y emergentes. Entre la relación de las palabras clave destacaron calidad, actividad antioxidante, salud, marketing y COVID-19. Además, se recalca la trascendencia y nexo de los estudios alimentarios con temáticas como la salud, innovación, sostenibilidad, industria y educación. En estudios posteriores se enfatiza en el abordaje de los términos con mayor potencial aunados a circunstancias actuales, verbigracia, soberanía alimentaria en contextos complejos, inseguridad alimentaria como problema actual, labor del consumidor en la promoción de la comida saludable o, comida rápida y mega tendencia ecológica en países en vías de desarrollo.
To understand how the challenges related to food security, sustainability and quality of life have become one of the actions of constant attention. The purpose of this study is to offer an in-depth analysis of the research lines currently being addressed in the food landscape. The method used was descriptive qualitative, based on a systematic literature review, and subsequently, a scientometric analysis using data from Scopus from 2012 to 2022, with a descriptive qualitative approach. The results demonstrate a direct relationship between the passage of years and the progressive increase in the quantity of publications. Three types of trends were distinguished: consolidated, intermediate and emerging. Among the key words, quality, antioxidant activity, health, marketing and COVID-19 stood out. In addition, the importance and linkage of food studies with topics such as health, innovation, sustainability, industry and education were emphasized. Subsequent studies, emphasis is placed on addressing terms with greater potential combined with current circumstances, such as food sovereignty in complex contexts, food insecurity as a current issue, the role of the consumer in promoting healthy eating, or fast food and the mega ecological trend in developing countries.
