Abstract
La presente revisión versa sobre el almidón (amilosa y amilopectina) que constituye una fuente de energía importante en la alimentación humana. Existen almidones de lenta digestión o resistentes que se han asociado a efectos benéficos en la salud humana y animal. Esta macromolécula es tan versátil que tiene diversas aplicaciones en la industria alimentaria ya sea en la producción de alimentos o como aditivo (espesante, espumante, hidrocoloide); además puede utilizarse en la industria textil por sus propiedades termoplásticas. Por ello, esta molécula es una fuente de energía fundamental y también representa una plataforma versátil para la obtención de diversos productos.
