Abstract

Droplets populations are generated from the dynamic equilibrium between the breakup and coalescence phenomena that take place during emulsification process. The estimation of the droplet size and droplet size distribution proves information on properties of dispersed phase and are important parameters affecting the emulsion stability. The information contains the transmission spectrum on scattering and absorption of emulsions lead to the quantitative interpretation of spectrum in terms of droplet size and distribution of liquid-liquid dispersions. The aims of this work is of using the transmission spectrum as a tool for characterization of emulsions en terms of droplet size and distribution based in measurements of droplet populations as a function of dispersed phase. The spectral interpretation is applied to emulsions produced from emulsifier / water / oil systems as a function of formulation and concentration of oil, leading to measurements of droplet size and distribution of the dispersions.
