Abstract
La Arracacha (Arracacia xanthorrhiza), es un tubérculo nativo de las regiones andinas, el cual ha llamado la atención por su notable adaptabilidad y diversas aplicaciones en salud. El objetivo del estudio fue realizar un análisis técnico de instalación de una planta de harina de Arracacha para mejorar el sistema inmune en adultos mayores, identificar la demanda de harina de Arracacha, las condiciones técnicas y la rentabilidad en Lima Metropolitana. La investigación fue no experimental, cuantitativa y de análisis-síntesis, con muestra de 308 personas sobre una población total, se aplicó un cuestionario, para recopilar información sobre el consumo de harina de Arracacha y así evaluar el impacto de la inversión sobre la implementación de la planta procesadora. Los resultados permiten desarrollar del diagrama de operaciones con costo-beneficio de 52.05, retorno positivo en 4.35 años. Se concluye que la instalación de la planta es altamente viable, con beneficios económicos, nutricionales y sociales, con alto valor de retorno.

The objective of the study was to conduct a technical analysis of the installation of an Arracacha flour plant to improve the immune system in older adults, identify the demand for Arracacha flour, the technical conditions, and profitability in Metropolitan Lima. The research was non-experimental, quantitative, and analytical-synthetic, with a sample of 308 people from a total population. A questionnaire was administered to collect information on Arracacha flour consumption and thus evaluate the impact of the investment on the implementation of the processing plant. The results allow for the development of an operations diagram with a cost-benefit ratio of 52.05 and a positive return in 4.35 years. It is concluded that the installation of the plant is highly viable, with economic, nutritional, and social benefits and a high return value.
