Abstract
Se analizan los factores de la cadena epidemiológica de la seguridad alimentario-nutricia y los cambios en los modos de vida sustentables en las localidades de los municipios de San Martín Hidalgo, Teuchitlán y Tala en el Estado de Jalisco, México, en el contexto de las transformaciones del modo de producción de la Microcuenca La Primavera-Presa de la Vega, en las últimas décadas. Se aplica un diseño aleatorizado trasversal analítico que se sustenta en el paradigma cuantitativo. En los resultados de la investigación se muestra cómo las localidades han pasado por un proceso de transformación en el modo de producción de alimentos, de autoconsumo de cereales, leguminosas, frutas y verduras combinada con crianza de animales de traspatio con uso de tecnología sustentable, a un modo de producción actual, donde predomina el cultivo de arroz, maíz y caña de azúcar a través de métodos intensivos con tecnologías invasivas, lo que tiene implicaciones en las dimensiones de la seguridad alimentaria y los modos de vida sustentables. Las variables de sustentabilidad del modo de producción de alimentos en las localidades se encuentran deterioradas y afectan la vida sustentable del territorio relacionada con el capital natural, físico, financiero y humano.
The factors of the epidemiological chain of Food Security and the changes in "Sustainable Livelihoods, MVS" in the localities of the municipalities of San Martín Hidalgo, Teuchitlán and Tala in the state of Jalisco, Mexico, are analyzed in the context of transformations of the mode of production at Microcuenca La Primavera-Presa de la Vega in recent decades. A cross-sectional analytical design is applied based on the quantitative paradigm. The results of the research show how localities have gone through a process of transformation in the Mode of production that reflects the current situation, where self-consumption of cereals, legumes, fruits and vegetables, combined with animal husbandry using sustainable technology happened to be a Mode of production where rice, maize and sugar cane cultivation predominates through intensive methods with invasive technologies, which has implications for the dimensions of food security and sustainable livelihoods. The sustainability variables of the food productions mode in localities are deteriorated and affect the sustainable life of the territory related to natural, physical, financial and human MVS's capitals.
