Finding the technological frontier in the food industry: a text mining analysis of converging technologies in Latin America

Abstract

Purpose This study aims to identify and analyze the technological frontier in the food industry by focusing on the key converging technologies in the value chain. This highlights their impact on competitiveness and economic development in Latin America, providing insights for stakeholders to adopt these innovations. Design/methodology/approach A mixed-methods approach integrates bibliometric analysis, patent reviews, and startup investment evaluations. Data were classified using a text-mining model to examine academic articles, patents, and startup investments, enabling visualization of the technological frontier through an interactive web-based platform. Findings Biotechnology, nutraceuticals, and nanotechnology have emerged as the most researched and applied converging technologies in food industry. These technologies significantly impact various stages of the value chain, particularly formulation, processing, and distribution. Despite their lower initial engagement, Latin American countries have substantial opportunities to leverage these technologies to enhance their global competitiveness. The developed web-based artifact effectively presents a dynamic visualization of technological advancements, enabling industry stakeholders to explore and apply these innovations strategically, thereby fostering economic and social growth in Latin America. Research limitations/implications The reliance on academic publications, patents, and startup data may limit the scope of technological developments. Further research should explore collaborations between the food industry and startups to promote innovation and technology adoption. Originality/value This study offers a pioneering analysis of the technological frontier in the food industry, utilizing text mining to comprehensively examine academic articles, patents, and startup investments. It identifies key converging technologies along the value chain, thus providing valuable insights for industry stakeholders in Latin America and beyond. By delineating the impacts of these technologies, this study offers a practical framework for fostering innovation, enhancing competitiveness, and driving economic and social development in the food sector. No other analysis has comprehensively addressed the technological frontier throughout the entire value chain using such an approach.
