Abstract
Este estudio examina la respuesta de la población tarijeña ante el aumento sostenido en los precios de la carne de res durante 2024-2025. Con una metodología mixta, combinando enfoques cuantitativos y cualitativos, se analizaron cambios en patrones de consumo y percepciones culturales a partir de 383 encuestas y 20 entrevistas en diversos sectores. Los resultados muestran una reducción significativa en el consumo de carne de res y un desplazamiento hacia carnes blancas como el pollo. Sin embargo, persiste la resistencia cultural a sustituirla por productos vegetales o innovadores, debido a su carga simbólica en tradiciones sociales y familiares. Aunque la crisis económica ha acelerado cambios parciales en los hábitos alimenticios, los comportamientos de adaptación son complejos y están influidos tanto por variables económicas como culturales. Estos hallazgos aportan una comprensión integral de las estrategias de respuesta en un contexto de crisis y cambio social en Tarija.
This study examines the response of the Tarijeña population to the sustained increase in beef prices during 2024-2025. Using a mixed methodology that combines quantitative and qualitative approaches, changes in consumption patterns and cultural perceptions were analyzed based on 383 surveys and 20 interviews across various sectors. The results show a significant reduction in beef consumption and a shift toward white meats such as chicken. However, cultural resistance to replacing beef with plant-based or innovative products persists due to its symbolic importance in social and family traditions. Although the economic crisis has accelerated partial changes in dietary habits, adaptation behaviors remain complex and influenced by both economic and cultural variables. These findings provide a comprehensive understanding of response strategies in a context of social change and crisis in Tarija.
