Análisis de la calidad y su impacto económico: evaluación del contenido de lípidos, sodio y nitritos en productos cárnicos

Abstract
La gestión de la calidad en la industria alimentaria es un factor determinante para la competitividad empresarial y la salud pública. Este estudio analiza la calidad de los productos cárnicos comercializados en Ica, Perú, a partir de la verificación de los niveles de lípidos, sodio y nitritos, con el propósito de evaluar las implicaciones administrativas derivadas del cumplimiento o incumplimiento de las Normas Técnicas Peruanas, particularmente en lo referido a la gestión de procesos, el control interno y la toma de decisiones estratégicas en las empresas del sector cárnico. Se recolectaron aleatoriamente veinte muestras de productos cárnicos para analizar su contenido de lípidos, sodio y nitritos. Los resultados revelaron que el 10% de las muestras excedieron el límite de lípidos, el 5% el de sodio y el 5% el de nitritos. Estos hallazgos no solo representan un riesgo para la salud del consumidor, sino que también generan costos de no conformidad significativos para los productores, incluyendo posibles sanciones, pérdida de reputación y barreras de acceso a mercados más exigentes. Se concluye que la implementación de sistemas de gestión de calidad y el control riguroso de la cadena de suministro son inversiones estratégicas que mitigan riesgos financieros y fortalecen la sostenibilidad del negocio.
Quality management in the food industry is a determining factor for business competitiveness and public health. This study analyses the quality of meat products sold in Ica, Peru, based on the verification of lipid, sodium and nitrite levels, with the aim of assessing the administrative implications of compliance or non-compliance with Peruvian Technical Standards, particularly with regard to process management, internal control and strategic decision-making in companies in the meat sector. Twenty meat product samples were randomly collected to analyse their lipid, sodium and nitrite content. The results revealed that 10% of the samples exceeded the lipid limit, 5% exceeded the sodium limit and 5% exceeded the nitrite limit. These findings not only pose a risk to consumer health, but also generate significant non-compliance costs for producers, including potential penalties, loss of reputation, and barriers to access more demanding markets. It is concluded that the implementation of quality management systems and rigorous control of the supply chain are strategic investments that mitigate financial risks and strengthen business sustainability.
